Oatmeal/ Almond/Cranberry Chocolate Chunk Cookie - Worlds Best!

WORLD'S BEST CHOCOLATE CHIP COOKIES

  • 3 ¼ cups oatmeal                                          
  • 9 oz unsalted butter, softened                                             
  • 1 cup  brown sugar                                                                                                                                            
  • 1 cup granulated sugar                                 
  • 1 cup toasted  almonds, chopped             
  • 2 eggs                                                                                                                                                           
  • 18 oz bittersweet or semisweet chocolate chips
  • 1 Tbl vanilla 
  • 2 cups all-purpose flour                               
  • 1 cup dried cranberries or raisins        
  • 1 tsp baking powder
  • 1 tsp baking soda    
  • ½ tsp salt
  1. Measure oatmeal, and blend in a blender to a fine powder. Cream the butter and both sugars. Combine  eggs and vanilla; add to butter mixture.  Combine all dry ingredients (flour, oatmeal, salt, baking powder, baking soda) add to mixture and blend well. Add chocolate chips, dried fruit and nuts.
  2. Using a 1 oz ice cream scoop, portion out patties and place them on a parchment paper lined baking sheet, 15 to a sheet.
  3. Bake for 12-15 minutes at 375°.  Remove from the oven and let cool on a rack for a few minutes before devouring.
